"Belly's" Peanut Butter Cookies

These cookies are "da bomb" and one of our family's favorites!

1 C brown sugar, firmly packed
1 C granulated sugar
1/2 C shortening
1/2/ C real butter, softened (NOT melted)
1 C peanut butter
2 large eggs, beaten
1 tsp pure vanilla extract
1/2 tsp salt
2 tsp. baking soda
2 C flour

-Cream together the sugars, shortening, butter, and peanut butter.
-Add the eggs and vanilla.
-In a different bowl, combine remaining dry ingredients.
-Add "dry ingredient mixture" gradually to "creamy mixture" until blended.
-Roll into tbsp size balls.
-Coat (roll) balls in granulated sugar.
-Place balls on cookie sheets - Do NOT mash with a fork!
-Bake at 350 for 10 minutes.
-Let cool on pan for a few minutes before removing.
-Cool on wire rack. (Cookies will be soft, but will set up nice.)
-Enjoy!!! (These are yummy warm and at room temperature!)

-Add chocolate chips to dough! (YUM!)
-Dip room temperature cookie half-way into melted chocolate and let set.
